Mini Pumpkin Cheesecakes

Okay, kids… While we’re being creative here.
Did you know that the recipe I shared for Pumpkin Cheesecake a few days ago ALSO makes awesome mini-pumpkin cheesecakes?
(These would be perfect to munch on while reading a good book, by the way)
Same ingredients, just spoon a bit of the yummy graham cracker crust in the bottom of 24 muffin liners, tamp it down with a spoon and fill each muffin cup about 3/4 of the way to the top.
I cut the baking time to 30 minutes, and it’s not necessary to let them languish in the oven for another hour. They cooled just fine on a wire rack.

A nice dollop of Rum/Cinnamon Whipped Cream just needed a sprinkle of crushed butterscotch candies to make this a truly nosh-worthy delight.
