Hawaiian Style Banana Bread
(Courtesy of Dennis Charfauros)
4-6 ripe bananas (2cups)
3 cups all purpose flour
2 cups sugar
1 tsp baking soda
1 tsp salt
1 tsp ground cinnamon
3/4 cup veg oil or canola
2tsp imitation vanilla
1 cup crushed pineapple drained
In a bowl smash bananas and add the crushed pineapples
In another bowl mix eggs, oil and vanilla. Add the banana and pineapple mixture to this bowl and mix in.
In another larger bowl add flour, sugar, baking soda, cinnamon and salt, mix well. This is the bowl all the mixture is going into. Add the other bowl into this bowl and power mix well.
Grease 2 loaf pans and split the mixture.
Bake at 375 degrees for 70 minutes and do the toothpick drill.
Side notes, you can add chopped nuts if you like, I use a half cup of raisins cause I am a raisin freak. I add that in with the banana and pineapple step.
I usually double the recipe and make 24 muffins also, baked for 35 minutes.
I also like to spin the containers halfway thru the baking time cause I’m crazy like that.
I also keep the drained pineapple juice and add a shot of Silver Patron for the cook.
