Deep Fried Pumpkin and Deep Fried Pecan Pie!

Yes, Virginia – they do exist.
You don’t have to wait until the state fair to transform your leftover pumpkin pie into a little bit of heaven here on earth.
Here’s what you’ll need:

However many slices of pumpkin pie or pecan pie you have leftover.
Oil for deep frying
2 cups flour
1 tsp salt
2 tsp baking powder
1 tbsp. sugar
1 tsp. vanilla extract
1-3/4 cup milk
2 eggs
confectioners sugar

Place your individual slices in the freezer for at least 6 hours (preferably overnight)
Heat oil to 350 degrees.
Mix your batter.
Whisk together the flour and salt and baking powder and sugar. Slowly add the eggs, vanilla extract and milk.
(I do mine about ten minutes ahead of time and let it sit and thicken up a bit. You want a nice thick batter for this.)
Using tongs, dip your frozen pie slices into the batter coating it completely. Carefully put it in the oil.
Turn it once or twice, and fry until it’s a delicious looking golden brown.
Drain on paper towels.
Dust with confectioners sugar before serving.
